Premium Tasmanian Lamb Shoulder Chops (classic or garlic, mint & rosemary)

The shoulder of the lamb is a highly desirable cut, though it contains plenty of tough muscle fibres and tendons that require long cooking times and lots of heat.

Though less tender than a rib or loin chop, the shoulder chop has a significantly bolder flavour if well prepared. They benefit from a brinerub, or marinade to help break down the tough muscle fibres. Try the garlic, mint & rosemary flavoured option for a cooking boost and some classic lamb flavours.

Cooking tips: give the chop a hard sear on the hotter side of the grill - about 2 to 3 minutes per side - before moving the meat to a cooler zone. Cook until it's just at the edge of medium-rare.
