Description

Silverbeet (or Swiss chard) has a thick, white stem and dark green, curly leaves. It is related to beetroot and spinach), but takes longer to cook and has firmer stems.

Silverbeet is a good source of iron, vitamins K, A and C and calcium. It is full of antioxidants and the vitamins within it help to prevent inflammation. Silverbeet contains potassium, which helps to maintain blood sugar levels plus a high fibre content which is beneficial in reducing blood cholesterol.

Use silverbeet in exactly the same way as spinach. Add it to soups, pies, lasagnes, pizza and dips for flavour, colour and texture.

Wash the silverbeet leaves to remove trapped dirt and cut the stems about 5cm from the leaves. To remove the white stems, use a sharp knife to cut along either side. To cut the silverbeet leaves, stack the leaves on top of each other, then slice them crossways.
